Apple Almond Vegan MUFFINS recipe by @plantsforfit!
RECIPE
INGREDIENTS:⁠
230g (2Cups) all purpose flour⁠
250ml (1Cup) plant milk of your choice⁠
2 large grated apples⁠
4 TBLSP Apple sauce⁠
2 TBLSP Corn starch⁠
Half a squeezed lemon juice⁠
Pinch of salt⁠
75ml (1/4Cup) coconut oil or other oil⁠
1 teaspoon baking powder⁠
40g (1/4C) Chopped almonds (+some extra to garnish on top)⁠
90g (1/2C) date sugar⁠
HOW to:⁠
Simply mix all the dry ingredients in a bowl. Next, in a separate bowl place the milk and lemon juice and stir und let it sit for a minute. Next add the dry ingredients (flour, starch, baking powder, salt, sugar), stir well together. Add now add the apple sauce, grated apples and almonds as well as the oil and give another good stir until everything well combined! Place the mixture either on some parchment paper in a muffin baking form or grease the baking pan form before putting mixture in it. Garnish with some extra almonds. Bake for around 20 minutes at 180°C. Enjoy!
