BUCKWHEAT VEGAN PANCAKES @veganchefron
2T Flax (fresh ground)
5T Warm water
Combine & let sit for 5 minutes.
1¼C Coconut milk
2tsp Apple cider vinegar
Mix wet ingredients then add flax “egg.” Let sit a few minutes.
1C Buckwheat flour
2T Baking powder
Mix dry ingredients in a large bowl. Add wet mixture and mix with whisk, don’t over stir.
Use olive oil spray on skillet. Turn burner to medium high. When a drop of water sizzles, time to add ½C of mix to the pan. Let brown on the first side well before flipping pancake. Use additional spray if needed.
Serve with pure vegan maple syrup.
