~2 cups cauliflower – finely chopped into ~1/4 inch pieces
1 flax egg (1 tbsp ground flax + 3 tbsp water) – or sub 1 egg
1 can chickpeas
3 tbsp tahini
1 tsp cumin
1 tsp garlic powder
1 tsp paprika
1/2 cup finely chopped parsley
3 tbsp oat flour
salt/pepper to taste
1/2 lemon – juiced
+ buns and desired toppings
Preheat oven to 425 degrees.
Toss cauliflower in salt, pepper and oil. Roast for 30-40 minutes or until crispy.
Make your flax egg by mixing flax and water. Let sit refrigerated for 10-30 minutes.
In a large bowl partially mash 1 can of chickpeas. Add all remaining ingredients including cauliflower and flax egg and mix.
Form 3-4 evenly sized burgers.
Stove top method: Heat oil in a skillet in medium heat cook burgers for 5 minutes on each side.
Oven method (prefered): Bake burgers for 35-40 minutes.
Serve burgers on a toasted bun with toppings of choice. Extra burgers can be stored in the freezer.
