Crispy Cauliflower Gnocchi in Creamy Sun-dried Tomato Sauce by @alexafuelednaturally
1 package store bought gnocchi (pictured Trader Joe’s cauliflower gnocchi) [Trader’s also has kale vegan gnocchi]
1 tbsp oil
Add 1 tbsp oil to a pan over medium heat. Add the frozen gnocchi and constantly toss with a wooden spoon or spatula , cooking for 5-7 minutes until crisp on both sides!
1/2 cup sun dried tomatoes in oil
1/2 yellow onion
3 cloves garlic
1 tsp avocado oil
1/2 cup raw cashews (or 1/2 cup white beans for a bit free option)
2 cups water
3 tbsp nutritional yeast
1. Saute onions and garlic in oil, for 4-6 minutes until fragrant. Add the cooked onions and garlic, cashews, 1/2 cup sun-dried tomatoes (separated from the oil, if a bit gets in there that’s okay), water, nutritional yeast, salt and pepper to a blender and blend until smooth.
Combine gnocchi with sauce, top off with fresh herbs, sun dried tomatoes and chili pepper flakes!
