Lemon Roast Asparagus 🍋:
⁃Preheat oven to 395°F (205°C);
⁃Wash and trim the roots of asparagus, drizzle with olive oil, salt and pepper:
⁃Roast in a parchment paper lined pan for about 10 minutes, depending on how thick your asparagus are, keep a close eye!
⁃Drizzle on freshly squeezed lemon juice and with lemon zest (optional).
Balsamic Glazed Mushrooms 🍄:
⁃Wash and trim mushrooms;
⁃In a large frying pan, heat a drizzle of olive oil, saute 2 minced garlic cloves until fragrant;
⁃Add in mushrooms, cook till the moisture lets out;
⁃Add 2 tbsp balsamic vinegar, 1 tbsp tamari/soy sauce, 1/2 tbsp brown sugar, salt to taste;
⁃Saute till the sauce thicks and mushrooms well coated.
