Juicy Bananabread recipe by @veganlovers_se
Takes about 15 minutes to prepare and 40 minutes to bake.
•4 bananas as ripe as possible
•1/2C sugar (I would use coconut sugar as a healthier alternative)
•1 teaspoon of genuine vanilla bean extract
• 1 teaspoon of sea salt
• 2 teaspoons of cinnamon
• 80ml (1/3C) of cold pressed rapeseed oil (or other veg oil)
•1 3/4C of flour (use GF if desired)
• 1 teaspoon of bicarbonate soda
• sprinkle of cane sugar for topping
Mash bananas kinda chunky, add: sugar, vanilla, salt, oil and mix together.
In a separate bowl mix flour and bicarb soda.
Add banana mixture and flour together, mix well with a spoon.
Pour in to your breadtin which is lined with baking paper. Sprinkle cane sugar on top for that delicious crunch.
Bake on 160c (325F) for about 30-40 mins depending on your oven – should be 96c (200F) innertemp when ready.
Keeps well frozen and in the fridge for a week.
