Peanut Butter Tofu Noodles by @everythingicookandeat

2 tbsps peanut butter (I used @meridianfoods crunchy)
2 tbsps soy sauce or tamari
2 tbsps warm water
2 tsps rice vinegar
1/2 block firm tofu
1 packet of pre-cooked noodles (I used @barenakedfoodsofficial)
Any veg you’ve got handy
Grated ginger and garlic
In a pan, add a drizzle of sesame oil, the grated ginger and garlic if you’re using it, chopped veg and chopped tofu. Fry on a medium heat until the tofu starts to crisp.
Remove from the heat. In a small bowl, add the peanut butter, water and soy or tamari. Mix with a fork until well combined (it might take a minute or so depending on the peanut butter you’re using).
Add the noodles and peanut sauce to the pan with the tofu and veg. Stir fry for a couple of minutes until the noodles are coated in the sauce. Done!
