STUFFED SQUASH by @SuncafeLA
* @SuncafeLA is serving up a Vegan Thanksgiving Feast to take home this Holiday. Choice of Tempeh Steak with Mushroom Ragu or Stuffed Squash, and it comes with all the trimmings: GF Stuffing, Pumpkin Pie Cheesecake, Sweet Potatoes with Vegan Marshmellos, Salad w/candied nuts & pomegranates, green beans, gravy. CHECK IT OUT!
4 Delicata Squash, cut in half, deseeded (you could also use 2 acorn squash)
½tsp Vegetable oil
1T Garlic, minced
Coat squash with oil and spread on garlic. Bake at 400F for 20-30 minutes until squash meat softens.
1 Garlic, small clove
1T Lemon juice
3/4tsp Nutritional yeast
1tsp Italian seasoning blend
Blend until smooth
1½C Quinoa, cooked
½C Onion, chopped
¼C Celery, small chop
½C+ Cashew cheese
Spray pan and saute onion on medium heat for 3 minutes. Add everything except cheese and saute another 1 minute. Add a splash of water if sticking. Integrate cheese into a creamy risotto consistency. Turn off heat.
Add stuffing into squash, top with favorite nuts or seeds if desired. Bake 5 more minutes. Serve.
