1/2 block of extra firm tofu, pressed of liquid, and cubed
1-2 tbsp Tamari (gluten free soy sauce)
drizzle sriracha (optional)
1 bell pepper (I used green), chopped
1 head broccoli, chopped into bite sized pieces
3-4 cloves garlic, finely chopped
1/4 onion, chopped
1/4 cup tamari
1/4 cup sweet chili sauce
1 1/2 tsp onion powder
1 tsp chili garlic sauce (start with less for less spice)
1/2 cup water
1/4 of a Napa cabbage, shredded thin
4.5 oz rice noodles
💫Heat a skillet on medium heat, add tofu and saute until crisp and browned. Drizzle with 1-2 tbsp soy sauce and cook until liquid is absorbed. Drizzle with sriracha if you like spice, toss to coat and transfer to a plate while you cook the rest of your vegetables.
💫In the same skillet cook onion, pepper, and garlic, for ~5 minutes until soft. Add broccoli and cover the pan to steam until the broccoli is bright green.
💫Prepare your rice noodles as instructed on packaging. After straining transfer back into its pot and transfer your vegetable mixture to them. Whisk all sauce ingredients together and pour over vegetables and noodles. Toss in shredded cabbage. Serve with tofu and more sriracha if you like spice!
