Taco Tuesday with Mexican Mince Tacos by @run2food
“I used my favourite non-soy, high-protein, natural plant-based mince by @flexiblefoodsau to make the mince 😋 These tacos are high in protein and packed with flavour & fun textures! 🥳
RECIPE
MEXICAN MINCE TACOS
Serves: 2-3
INGREDIENTS:
Mexican mince:
✅100g plant-based mince) I used – packet of @flexiblefoodsau Mexican mince) (VFR – could also use jackfruit)
✅ 300ml (1.25 cups) vegetable stock ((VFR – if you don’t have use 1tsp onion powder per cup of stock)
✅ 1 tablespoon tomato paste
✅ 1 x small carrot, diced
✅ 1 x small zucchini, diced
✅ 1 teaspoon oil
✅ Spices: 1 tablespoon cumin, 1 teaspoon of smoked paprika, garlic powder, onion powder, salt
*Optional: chilli powder
Other taco ingredients:
✅Soft tacos
✅Cabbage slaw
✅Tomatoes
✅Avocado
METHOD:
1. In a pan on medium heat, cook the carrot and zucchini in oil for 2-3 minutes until softened.
2. Add in the mince, water and extra slices and cook for 10 minutes, stirring occasionally until all the Starr has been absorbed and the mince is tender.
3. Assemble the tacos by piling on the mince and toppings.
Enjoy every bite! The leftovers make a great filling for a burrito/burrito bowl and taste amazing the next day! 🙌🏼
